Hummus!

I can not tell you the joy I feel when I get our daughter to eat…especially healthy things. She is (we are) pretty good at the healthy thing, but I feel it slipping away from me sometimes, when we are in a hurry or when life happens.

This Hummus she will always eat. And therefore I try to make it often. Chickpeas are full of protein, iron, and fiber. The garlic, olive oil and apple cider vinegar in my recipe are extra health bonuses.

You will need:

  • 3 cans of organic chickpeas (I know, I know…evil cans! Lined with nastiness! But sometimes I just don’t have the capacity to plan and soak and boil chickpeas ahead of time. If you choose to use this recipe with dried chickpeas, then use around 2.5 cups of DRIED chickpeas, soak these overnight in plenty of filtered water, boil until soft, rinse, cool, and proceed below)

  • 1/3 cup of organic, unfiltered olive oil

  • 1/3 cup of organic raw, unfiltered, apple cider vinegar

  • 3 cloves of garlic

  • 1/2 tsp of pink Himalayan salt (any salt will do, but this kind is particularly awesome)

    This recipe is a little heavy handed on the vinegar and garlic, so if it is your first time making it, maybe add those ingredients gradually and adjust to your family’s palate.

  • Put all ingredients in a blender. (Ninja, Nutribullet, whatever you have)

  • Blend to your desired consistency! (I have found the smoother the better for my little one!)

AND VOILA!!!
